But seriously, Apple is really shitty about making things locked down so that users can’t mess with them. I don’t think anyone would care if they had to add an extra .5mm thickness to allow for modular RAM.

Is that 100% displayed for each of 8 cores? Windows totals 100%, split across however many cores, so in a single-threaded application the max I see is 25% (four core).
